Problem Description:
When passing strings through ConverTo-Json, HTML special characters are encoded. It would be valuable if there was an option to preserve the original string.

Repro Steps:
PS C:> "bob < jack" | ConvertTo-Json
"bob \u003c jack"

Expected Results:
PS C:> "bob < jack" | ConvertTo-Json -NoEncoding
"bob < jack"
